In this study, we investigated whether it is possible to substitute the inorganic selenium of chitosan oligosaccharide substrate organic selenium. We investigated the quality characteristics of egg produced from laying hens with non- supplemented diets or diets supplemented with organic selenium on chitosanoligosaccharide. Organic or non-organic selenium were mixed normal laying hen feedstuff. Laying hens were fed diet for 45 days containing powdered chitosan oligosaccharide-selenium, inorganic selenium or normal feedstuff. During the experimental period, organic selenium group increased the edible weight (dryness condition), egg shell thickness, white blood cell and red blood cell compared to inorganic selenium(p<0.05). And, egg weight, edible weight (not dryness condition), egg colors (yolk) and lymphocyte were no significant difference. But, each effectiveness are different from organic-selenium concentration to feeding period. It was investigated that organic selenium had equal or more effects compared with inorganic selenium or normal diet. These results suggest that organic selenium could be used as substitute for inorganic selenium as well as the supplement of laying hens diets to produce functional eggs.
